Super simple to make and perfect for when you have friends coming over. A keto dessert that can fool most that they are not eating mounds of sugar.
You can leave out the lemon glaze but I do enjoy adding it as it makes the cake that much more intense lemon flavor which I love.

Lemon Pound Cake Ingredients
3 Eggs
87g Erythritol
70g Coconut Oil
35g Lemon Juice
130g Almond Flour
20g Coconut Flour
1/2 tbsp Baking Powder
Lemon Pound Cake Glaze
75g Powdered Erythritol
1 1/2 tbsp Lemon Juice
How to Make Lemon Pound Cake
- In a bowl add Eggs, Erythritol, Coconut Oil, Lemon Juice and mix till well combined
- In a separate bowl add Almond Flour, Coconut Flour, Baking Powder and mix
- Add wet ingredients to dry and mix to make a batter mix
- Add the batter to a loaf tin flatten
- Bake for 30 minutes at 180°C
How to Make Lemon Pound Cake Glaze
- In a bowl add powdered Erythritol, Lemon Juice and mix
- Pour over the baked Lemon pound cake
