It is fair to say that if you bake keto desserts when following the keto way of life you will use a lot of almond flour. So, I am always looking for different ways to create desserts. These Coconut Flour Peanut Butter Cookies as the name suggests uses coconut flour.
Some find baking with coconut flour much more difficult as it’s not as simple as swapping almond flour for coconut flour. However, I have perfected that for you with this recipe and it works perfectly for a delightful keto cookie.
I love a crunch and a snap with my cookie and these offer just that and go perfectly with a glass of ice-cold milk.
The coconut flour doesn’t overpower the taste but adds a different dimension to the taste. These are excellent if you are getting a little tired of cooking with almond flour.

Coconut Flour Peanut Butter Cookies Ingredients
200g Erythritol
2 tbsp Coconut Flour
1/2 tsp Baking Powder
240g Peanut Butter
1 Egg
How to Make Coconut Flour Peanut Butter Cookies
- in a bowl add the Erythritol, Coconut Flour, Baking Powder, and mix to combine
- Now add the Peanut Butter and Egg and work into the try ingredients to make a dough
- Make 12 balls and place them on a lined baking sheet
- Press down to make a cookie with a fork or with your hands
- Bake for 10-15 minutes at 190°C
